I offer consultancy and training individual and online, for everything related to the sourdough starter and the management of bread and panettone dough.

The service is aimed at professionals in the sector e enthusiasts with experience and already started sourdough starter.

The consultancies are carried out in video call or by mail.
Alternatively, a consultancy service is available via FORUM, through the subscription to the Panettone VIP Plan

The training courses are carried out exclusively in video call and they are individual.

Consulting and/or training service is offered only in Italian or English.

The online consultation with Alice was a very good chance for me to get to know the pasta madre. I didnt know anything about it before. We talked about all important things like hydration, flour ratio and more to start to understand what its all about. "I did a course with Alice last summer and it was very helpful. I have been using licoli for years but she was pretty out of shape at the time so I turned to her. Alice explained a lot of details about licoli to me in detail , such as the flour in its total composition, the refreshments, the room temperature that changes according to the season, the moment in which to use it and how to keep it, in short, an ad hoc explanation at 360 degrees. Alice is a great source of information. On a very delicate subject, such as Pasta Madre, she was very helpful, structured and descriptive on all the details about the subject. Through a guided series of sessions, with detailed information, examples, tips, details and answers on your questions, her class di lei will help you get a much better understanding on something that you probably have no experience to feel comfortable. For someone that is willing to experience a lot and build confidence on either Pasta Madre, I would recommend spending a few courses with Alice. I requested training in maintaining and balancing solid sourdough. The information received was very interesting for the purposes of a global vision of life inside the yeast, I noticed unquestionable improvements once some changes were implemented. However, despite having found Alice very prepared I would perhaps have preferred to go more specifically about my yeast. It's not easy remotely, I realize that. Another note of merit that I want to mention is Alice's great willingness to answer questions accurately, not only during the lessons.
