More precisely, I offer consulting and training for everything concerning lievito madre (liquid and solid sourdough), bread and panettone making.

In particular:

  • Making of pasta madre: how to start it and how to get it active;
  • Methods of maintenance of pasta madre;
  • Understanding pasta madre: sensorial analysis, acidity balancing, problems fixing;
  • Understanding bread making: analysis of the process, problems fixing, reaching goals (like open crumb), tips and tricks.
  • Understanding panettone making: analysis of the process, problems fixing, reaching goals (like open crumb), tips and tricks.

At the moment consulting and training are carried out only via internet.
